ALMOND FLOUR CHICKEN CUTLETS

These almond flour chicken cutlets are delicious, easy, & nutritious. One of the best things about these almond flour chicken cutlets is that they can be part of a meal prep or made quickly for dinner . The cutlets are made with natural almond flour and cooked to perfection in the air fryer. It’s a healthy, savory dinner that can be served with potatoes, rice, vegetables, or in salads!

Ingredients

  • Chicken breasts or chicken cutlets – your choice!

  • Almond Flour

  • Olive Oil Spray

  • 2 Eggs

  • Baking Soda

  • Parsley (optional)

  • Seasonings of choice: Garlic powder, Sea Salt, Pepper, Onion Powder, Parsley, Oregano

Step by Step Instructions

1.  Pat dry chicken

2.    Pound chicken breasts using a meat pounder or rolling pin. If you desire making thinner slices from breasts, slice the chicken breasts horizontally so that you now have thin cutlets.

3.    Your breading ingredients go in one bowl and your egg mixture goes in another.

4.    Beat 2 eggs in a wide bowl

5.  In another wide bowl, pour a cup of almond flour.

6. Add in with the one teaspoon of baking soda & fresh parsley

7. Add in seasonings of choice: Garlic powder, Sea Salt, Pepper, Onion Powder, Parsley, Oregano

8.   Dip each slice of chicken in the eggs to coat.

9.  Let the excess drip off, then coat thoroughly in the almond flour mixture. Place on a plate and repeat with the remaining chicken. 

10.  Spray each piece of chicken with olive oil spray and air fry. Depending on thickness of chicken, each piece should take around 6-8 minutes on each side.

11.  Transfer to a plate and repeat with the remaining chicken.
