TACO BOWL

This Taco Bowl Recipe is the BEST for an easy and delicious weeknight dinner! Made with ground turkey, brown rice, & veggies this is a meal that everyone will love & is filled with whole, balanced, nutrient dense ingredients.

Add a creamy yogurt sauce, cheese, & some pico de gallo and this dinner can be made in no time at all.

Ingredients

  • Ground Turkey (or any ground meat of your choice)

  • Brown Rice (any rice of your choice)  

  • Mixed veggies of choice: zucchini, bell peppers, mushrooms, yellow onion

  • Plain Non-Fat Greek Yogurt (Optional, or sour cream)

  • Pico De Galo

  • Cumin

  • Chili Powder

  • Ground black pepper

  • Garlic Powder

  • Onion Powder

  • Sea Salt

  • Extra Virgin Olive Oil

  • Pico De Gallo (optional)

  • Shredded Cheese (optional)

Step by Step Instructions

Brown Rice:

1.      I make the rice about an hour before dinner since it takes about 55-60 minutes. Boil 5 cups of water.

2.      Measure one cup of brown rice. Rinse the rice & dry it.

3.       Once water is boiling, put rice into the water and add 3 tablespoons of extra virgin olive oil, sea salt, and ground black pepper. Set timer for 55 minutes.

4.      Put the lid on the pot and leave on high heat for about 3-4 minutes.

5.      Stir throughout the 55 minutes. After 3-4 minutes, lower the heat to medium/low. Keep stirring every few minutes.

6.      Once water is dissolved and rice is at the texture you desire & cooked, let rice sit for a few minutes.

Ground turkey:

1.      Cook the ground turkey in a frying pan with a taco seasoning. I make my own very simple taco seasoning: I use Cumin, Chili Powder, Garlic Powder, Onion Powder, & Ground black pepper.

Mixed Veggies:

1.      Cut your mixed veggies of choice. I use zucchini, mushrooms, yellow onion, and bell peppers.

2.      Place all cut up veggies in bowl. Sprinkle extra virgin olive oil, garlic salt, garlic powder, and black pepper

3.      Cook your veggies. I use my air fryer. You can use your stovetop, oven, etc. I air fry my veggies for 8 minutes.

Assemble your Taco Bowl:

1.      ½ Cup of brown rice

2.      ¾ cup of ground turkey

3.   Veggies

4.    1 tablespoon of Greek non-fat plain yogurt

5.      Pico De Gallo & Cheese
