Eggplant Pizza
Ingredients
1 Eggplant
Mozzarella Cheese
Pecorino Romano
Tomato Sauce
Garlic Powder
Oregano
Sea Salt
Extra Virgin Olive oil
Ingredients Notes
I use a large, firm eggplant. You want to be able to slice the eggplant into big rounds.
To season: Garlic Powder & Oregano
Pizza Sauce: Tomato sauce of your choice. My favorites are Rao’s or Carbone
Cheese: My go to’s are mozzarella & Pecorino Romano. You can use any cheese of your choice!
Toppings: These are optional. You can add veggies, pepperoni, etc.
Step by Step Instructions
1. Preheat oven to 400 degrees
2. Line baking sheet with tin foil & set aside
3. Slice eggplant into thick rounds that are around ¾ inch to 1 inch thick
4. Sprinkle sea salt on them & pat dry since they are filled with moisture. Let them sit for about 10 minutes
5. Place the eggplant on your baking sheet and top them with your tomato sauce. I do about 1-2 tablespoons of tomato sauce on each.
6. Sprinkle the cheese on each eggplant round
7. Add garlic powder and oregano to each eggplant round
8. Bake in the oven for 16-18 minutes!
